Who doesn't love a great tamale! It's a fantastic tradition that has lasted throughout generations.
There are many different types of tamales from the popular Red Chile and pork, Green Chile with cheese and the delicious sweet tamales. The varieties differ from region to region but in the end a tamale at Christmastime and the days following is a necessity in our family.
I try to make tamales every year, but it's a time consuming task, so for the last 3 years we opted to taste the tamales of others, but there is nothing like a homemade tamale. Ok, I know they are all homemade, but from your hands, your sweat and your first pick off the top is an indescribable accomplishment and boy does it taste GREAT!

Check them out, give a try and let me know how it goes! The number one tip is to make sure you don't put too much lard in the masa - it gives you a dry tamale. Other then that experiment with flavors and fillings and above all ENJOY!
